The Good Apple

As we say goodnight to summer sunshine, slurping smoothies and flaunting string bikinis, we have to keep ourselves surrounded by something sweet. What says sweet better, especially in October, than fresh crisp apples? Between the apple picking trips I’ve got on the calendar with my girlfriends this month or seeing on FreshDirect that Honeycrisp apples are finally back in season, it’s fair to say that this month is the prime time to get some apples back into the pantry. But, who doesn’t want to get creative with them?

In the recent issue of Martha Stewart Living, I opened up the pages to find that their talented team had taken apples to an entirely new and creative level. It definitely got me inspired! My favorite part of this October issue was this irresistible recipe incorporating two of my favorite foods: apples and ice-cream. They created Caramel Apple Sundaes. YUM!

Whether you want to use this recipe for your future pumpkin decorating party or just something fun to do on an ordinary Sunday evening, these Caramel Apple Sundaes will definitely let others see that you are the apple in their eye!

Caramel Apple Sundae Recipe

{recipe via Martha Stewart Living, October 2011}

Ingredients
1 cup sugar
1 tablespoon water
1 cup heavy cream
12 apples, such as Gala
1 lemon, halved
3 pints vanilla ice cream
1/2 cup chopped toasted walnuts

How To
Combine sugar and water in a medium saucepan over high heat, and cook, stirring occasionally, until mixture is dark {about 6 minutes}.
Remove from heat, and carefully pour in cream {mixture will spatter}, whisk until smooth. Let cool.
Slice the top 3/4 inch from each apple, discard.
Using a spoon or melon baller, scoop out enough flesh to fit a scoop of ice cream.
Drizzle with some lemon juice to prevent flesh from browning.
Fill each apple with a scoop of ice cream. Spoon caramel on top, and sprinkle with walnuts.
