Lavo’s Chopped “Louie” Salad

When you’re the executive chef at one of the most popular restaurants in NYC, it’s a given you’re a top tier chef, but being super quick in the kitchen is the way to satisfy a busy New Yorker’s appetite, and keep them coming back for more. So when I was pondering about perfect summer dishes to create that were not only easy, but delicious too, Lavo’s Chef John Deloach immediately came to mind. And when I finally got to meet the legend behind Lavo’s super upbeat + popular brunches to dinners to nights out with the hunny, we decided it was a must for us to jump into Lavo’s kitchen together and whip up a quick + simple summer dish for anyone to create in their own casa. Hola!

But for the majority of us living in small NYC apartments or in a tiny Hamptons timeshare for the summer where a stove may not even be accessible, we thought it would be fun to mix it up a bit. We decided to create a rich + tangy yet totally delectable salad that anyone {ahem, me included!} could easily make within 5-10 minutes and leave their lunch or dinner guests walking out with huge, lobster smiles. But what, oh what, could we possibly create? Lavo’s Chopped “Louie” Salad, of course!

And get this, you barely need any counter space to make the salad come to life. All you have to do is get various ramekins or bowls for the ingredients, throw in a handful of each, mix it up with a dash of Lavo’s in-house vinaigrette, topped with boiled seafood, and voila! Your dish is my command.

Going ga-ga for all things Lavo’s Louie? Here’s the recipe, darling:

.5 oz diced tomatoes

.5 oz diced red onions

.5 oz diced cucumber

.5 oz diced celery

.5 oz chopped roasted red peppers

.5 oz diced roast portobello mushroom

. 5 oz pitted black olives (tagiasco or calamata)

.5 oz sliced radish

2 oz of chopped mixed greens

Place a handful of each into bowl, mix together

Lavo’s Vinaigrette: 3 tbsp of Extra Vigin olive oil, 1 tbsp red wine vinegar, salt + pepper, and dry oregano mixed together

Top with: Half of a poached lobster and 3 large shrimp poached and diced
