Impromptu Potluck

Say farewell to the bipolar weather of this season, and a huge hello to summer sunshine! Following the beautiful sunsets include some of the best high profile events of the year, fabulous Hamptons weekend getaways, and my personal favorite…outdoor dinner parties.

Over memorial day weekend, I decided to have a spontaneous dinner party to celebrate the true beginning of summer. Being last minute, it made more sense for the dinner to be potluck. With only three hours to invite guests, prepare foods, and primp it couldn’t have been more successful! Friends flowed in and out of my place after traveling back into the city, which made it more casual and fun. Less work. More entertaining.

Here are some of my favorite appetizers that will help make your next impromptu summer dinner party stress-free, chic, and enjoyable for your guests and you!:

Creamy Brie with wheat crackers and carrots

Classic chips and salsa

Brother Jimmy’s pulled pork, sweet potato fries, and jalapeno poppers

White chocolate covered pretzels

Carrots with roasted red pepper hummus

Grilled chicken over a bed of brussels sprouts

My sweet friend, Caroline, brought these delicious cookies!

Trader Joe’s Pastry Bites with Feta Cheese and Caramelized Onions & Parmesan Pastry Pups

Other potluck appetizers included creamy guacamole, pasta salad, fruit salad, and many more…all perfect for the sunny holiday weather!

Now it’s your turn. On your next lazy Sunday, invite some friends to come over and ask them to bring their favorite appetizer. It’s quick and easy. When everyone is involved, everyone has fun!
