Taco Mamacita Salad

Hola señoritas! In case you haven’t noticed, Cinco de Mayo marks summer being right around the sombrero. And if you’re anything like me + looking forward to prancing around the Hamptons this summer in a bikini, then keep reading…Hola!

It’s officially time to start cutting back the cals, working out more, and eating healthier so we can run up + down the beach…sans giggle. So when I’m trying to watch it, I always do two things with my food intake: bring the calorie count down + amp up the protein. Not only does it make me + my tummy incredibly satisfied, but it keeps me full for hours! Bonjour. And with the Protein Elizabeth recipe being a dish I’ve cooked frequently for years, there is a new dish I would love to introduce: Taco Mamacita Salad. Best part? It’s under 250 calories and has a ton of protein.

And whether you choose to prepare the salad with grilled chicken or ground turkey meat {both pictured for your benefit, sugaaa}, it’s always fun to actually cook both at the same time and then save the other meat not used for your next meal. Saving money while burning calories? In!

that’s just 1lb of 99% fat free ground turkey

all that’s dashed on the chicken is salt-free garlic + herb seasoning

1T of low salt taco seasoning for that extra kick

hola

chop up that lettuce

sprinkle on avocado for that glowing skin

throw on the taco meat + add my personal favorite, salsa…voila!
