Beach Bound Soup

I just made my airline reservations for a bachelorette beach trip in April, and the thought of getting into a bikini has sent me straight to my “skinny recipe” file…totally forgot about this phenom dieting soup!

It’s cheap, low calorie, low glycemic, full of protein and the best part is that it only takes 5 minutes to prepare in a slow cooker before you walk out the door. You’ll come home from work to a delicious soup that is so filling and delicious!

Beach Bound Soup Recipe

1 tsp ground cumin

¼ salt

¼ tsp black pepper

6 chicken thighs, no skin {I like no bone as well!}

1 cup chopped onion

1 can rotel {mild or regular for spicier}, undrained

1 small can chopped chiles undrained

1 can pinto beans, rinsed and drained

¼ cup low fat sour cream {optional}

¼ cup minced fresh cilantro {optional}

Place chicken in slow cooker. Sprinkle cumin, salt and pepper over chicken.

Add onion, tomatoes, and chiles. Cover and cook on HIGH 3 hours or LOW 6-8 hours. Stir in pinto and kidney beans and cook on HIGH 1 more hour.

Can top each serving with dollop of sour cream and sprinkle with cilantro.
