Nello’s Chic Bellini

Everyone has that one spot near their flat they pretty much consider their second home…you know, the place to go just relax and sip wine, the place to bring friends for a catch up or just the place to bring a book and enjoy a long {and leisurely!} weekend afternoon. My neighborhood fave? That would be the glamorous Nello. Although this Italian resto, which has two locations {one in the UES and the other in South Hampton!} is a place to dine when your parents are buying {let’s just say their simple gorgonzola salad is a whopping $29…}, it’s the perfect spot to eye celebs and to grab cocktails. Hola.

My go-to Nello sip is their classic bellini. But, I could never figure out how to make it at home! So I pulled out my Southern charm one afternoon, and gracefully asked their bartender to show me the Nello secrets to concocting the perfect bellini. And honestly, when I made exactly what he told me at home it tasted identical! Bonjour. All you have to do is…

make simple syrup: pour two cups of sugar + one cup of water into a warm pot

stir it all together!

wait for it to boil

pour it into a container {i love this chic one!}

blend the strawberry + peach purées together in a different pitcher {add simple syrup for taste!}

pour the purée mixture into the flute

hola.

fill the flute halfway with champagne

sparkles + bubbles + fabulousness

stir, stir, stir

bellini booze bliss!

make sure you use caposaldo prosecco…nello’s go-to for making their fab bellinis!

have a bunch of the homemade syrup leftover?

not to worry! just add some mint to the mixture and pour into some southern iced tea or add to a mint julip!
